Turks and Caicos

Hi fellow travelers! We hope you are doing well. We wanted to share about our amazing trip to Beaches Turks and Caicos in case anyone was curious about traveling there. If you love turquoise water and powdered sugar sand beaches read on to learn more.

We took the red eye to Miami and hung out in the Admirals Club for our 5 hour layover. We highly recommend that. I have status at the moment due to a past work trip to China and we were flying internationally so it was free but you can buy day passes and I highly recommend it.

When we arrived in Turks and Caicos and made it through customs, transportation to the resort was easy peasy. They had many taxi vans waiting to go to Beaches.

I skipped over some important info though- let’s talk about the requirements to get to the island because of COVID. We had to get COVID tested 72 hours prior. Then upload our results to a website where they are processing travel authorizations for the island. It states that you will receive your documents well before 24 hours before you leave. Well that didn’t happen and I spent 4 hours calling to make sure we were good to go. We finally got it processed and could take a deep breath to start our vacation. That was a bit stressful so we did some family yoga breathing before heading to the airport for our red eye. 🕉

Our room was Concierge Level, which gets you a dedicated check in desk, better room options, and whatever you want alcohol-wise in your room. We had to wait a bit in the open air lobby to get checked in but we were able to get an extra rum punch while we waited. It was yum.

Our room was nice. It had a separate bedroom with a king bed and the sitting area had a twin daybed with a twin trundle. Both are key for us. We like a king bed and the kids don’t like to share if they don’t have to. There was a small table where the kids played cards while we got ready for dinner and 2 large balconies. Although we did not have views of the ocean, it was still nice to sit out there with a glass of wine while we got ready in the evenings. One night an electric Sesame Street parade went by!

The food was ok. And I temper that comment with the additional layer of- I’m a food snob so take that into consideration. It was ok. The sushi at Soy was great! The teppanyaki show at Kimonos was fun. We found ourselves at Mario’s quite a bit for dinner because it was easy, decent, and a great location for the evening activities. The best breakfast was at Bayside for the spectacular views. And they have mimosas if you ask for them!

All in all it was a great vacation. I’m glad we went and I look forward to exploring more of this part of the world.

DNOK

Wyoming is awesome!

The D and N of DNOK spent Labor Day weekend 2021 in Jackson, WY. Dave had been there before but I had not. It was amazing! We hiked, shopped, ate, floated on the Snake River, and found our Zen. We are at OYG and the Mangy Moose. Climbed the mountain at the Via Ferrata and completed the Rubicon climb which is rated “Difficult”! We were super proud to complete that one.

Then we headed into the Grand Teton National Park and reveled in the beauty that the National Parks always seem to deliver. We hiked Cascade Canyon and took the water shuttle across Jenny Lake. We ended the night with a 10 mile float trip along the Snake River. I got a snazzy new soft cowboy hat that I will wear everywhere. Dave got to try huckleberries for the first time. We saw 5 bears, 2 bald eagles, a herd of bison, some elk, and a moose that was lying down under a tree.

It was a magical and peaceful place and I would love to see it in the winter. It was hard being so close to Yellowstone and not taking a peek but we will make it there eventually. Learning that the flight was only 90 minutes wheels up to wheels down definitely makes Wyoming an easy place to travel to. On the way home we flew over the Grand Canyon which was really amazing. Now we are back at home and I’m ready for our next trip. This Sagittarius sure likes to travel! Bring it on!!!

COOKING!!!!!

I love to cook and I want to share my recipes with you.

Today we are making The Bomb Slowcooker Sloppy Joes. I adapted my The Bomb Vegan Sloppy Joes to the slow cooker and added quinoa and other yummy ingredients. It came together quickly and I’m hoping to enjoy it for lunch this whole week. I’m on a healthy lifestyle kick at the moment and know if I don’t plan I will binge on Pirate’s Booty instead of a meal. Stay tuned as this meal comes together. I will update this post with pictures and the recipe.

Who or what is DNOK?

DNOK stands for David (Dave), Nancy, Owen and Kaylee. We are DNOK. It came about one Christmas as I (Nancy) was signing gift tags. It was easier to sign DNOK and well, it stuck!

David, or as I renamed him after we started dating- Dave, is an HIV specialty pharmacist who enjoys wheeling in our Jeep, going on adventures to the middle of nowhere, traveling, scuba diving, and being a great dad and husband. I (Nancy) am a specialty pharmacist who also enjoys adventures to the middle of nowhere, scuba diving, yoga, non-motorized water sports, cooking, and baking fancy sugar cookies. Owen is our awesome son who also enjoys adventures, has a strong affinity for gaming, and is a competitive gymnast. Kaylee is our darling daughter who loves making crafts, cooking, and is a diver. There is more to us but you get the point. We live life! And we want to include you in our life. Maybe it will inspire you to do some good in the world. Maybe it will inspire you to do some good for yourself. The world could use some positive things right now.
